A Delicious Vegetarian Pasta to Spice up Your Palate

Developing delicious recipes has always been a hobby of mine, but making sure they are made with “good for you” ingredients holds equal importance. My extended family lives in California and they possess easy accessibility to all types of fresh ingredients from local Farmers’ Markets. Therefore, they often help me introduce new and exciting meal ideas. Furthermore, each time my family visits them, we have made it a tradition to create new recipes with one another. Just a few years ago, my uncle created a dish that has become a staple for my family and I. I can eat it for lunch, dinner, and as a snack. It is simple, light, and mouthwatering. I look forward to creating new recipes that are of the same category of deliciousness. But for time’s sake, here is how to make my favorite vegetarian pasta.


  • ½ a bag/box of preferred pasta choice 
    • My favorite brands: Fiber gourmet, Tolerant, Chickpea, and Sfoglini
  • ½ of an avocado cut into cubes
  • ¼ cup arugula 
  • ½ tbsp of olive oil
  • 2 pinches of Himalayan pink salt 
  • Handful of shaved parmesan cheese 


  1. Cook the pasta (use instructions on the box/bag for additional guidance)
  2. Once the pasta is fully cooked, place it on the final dish 
  3. Add all of your ingredients (can alter the amount of each item depending on preference)
  4. Enjoy!
